I had some leftover zucchini from a summer vegetable pasta I made a few days ago, and decided to try something new, ricotta zucchini fritters. Who knew zucchini was so easy to grate? They turned out quite well, although I would've loved a great dipping sauce or aioli. Any ideas of what would pair best with zucchini fritters?image/soulkitchenblog
